Garden Salad [Vegan, Raw, Gluten-Free, Dairy-Free]

This is a post about salad. And how good it is. And how good it can be. Salad is too often perceived as boring and bland – a blasé choice for those looking to lose weight. This is an apologetic love note to salad and an example of how fantastic salad can be.

We threw together a little bit of almost everything we had at the time. You could switch our the romaine for any other kind of greens, play around with the fruit choices, and include any kind of seed or nut for crunch.

INGREDIENTS [enough for 4 people]

1 head of romaine lettuce
1 c. cabbage [sliced]
1 apple [grated or shredded]
1 pear [chopped]
2 carrots [peeled]
8-10 asparagus stalks [chopped]
2 celery stalks [chopped]
1 yellow squash [chopped in large chunks]
1 cucumber [sliced thin]
2 kiwis [sliced]
1 c. strawberries [sliced]
4 medium radishes [sliced thin]
3-5 Tbsp. raw sunflower seeds
2 Tbsp. hemp seeds
3 Tbsp. dried goji berries

Prepare all ingredients as specified above, place into a large bowl, and toss them together using your hands (or salad mixers if you’re fancy like that).

The fruit makes this salad good enough without any dressing at all. But as a suggestion, the Asian dressing from this post is a great match. [It's our go-to because it's the best dressing ever.]

Serve this up for guests as a colorful first course!
